Vegan Spicy Sloppy Joes

Um, you’re about to die.

Then, you’re gonna come back to life, eat this sandwich, and then die again. It’s THAT good!

Ingredients:

2 cups of jackfruit, in water (if in brine, rinse well)
1 tablespoon of olive oil
1/2 cup of diced onion
4 cloves of minced garlic
3/4 cup of ketchup
2 tablespoons of brown sugar
1 teaspoon of apple cider vinegar
1/2 teaspoon of garlic powder
1/2 teaspoon of black pepper
1/2 teaspoon of ground cumin
a good pinch of red pepper flakes

Tequila Lime Coleslaw:
2 cups of coleslaw mix
1/2 cup of vegan mayo
2 tablespoons of sugar
1 pinch of salt
1 pinch of pepper
1/2 teaspoon of apple cider vinegar
1 tablespoon of tequila
1 tablespoon of lime juice

Directions:

To cook the sloppy joes, just heat a skillet. Then, add the oil, onion, garlic, and jackfruit. Cook until the onions are tender. Use two forks and shred the jackfruit to mimic the look of pulled pork. Then, add in the brown sugar, garlic powder, black pepper, cumin, and red pepper flakes.
